Whoever said vegans only eat nuts and granola has never eaten at my house! Today for lunch I made some Tofu Rancheros from a recipe out of Veg Times. Here are some pictures. They were really really good and I will make them again, and again, and again. 🙂

Tofu Rancheros recipe:

2 tsp veg oil

1 med onion. Sub with Hing for devotees

1 tbs chili powder

2 tsp cumin

2 tsp oregano

1 15 oz can tomato sauce

1 cup mashed tofu (firm)

2 tsp lime juice

1 15 oz can refried beans

6 6 inch corn tortillas

2 tomatoes diced (2 cups)

1 avocado diced

1/4 cup chopped cilantro

Heat oil in skillet over med heat. Add onion/hing, chili powder, cumin, and oregano. Saute 5 min. Stir in tomato sauce, tofu, and lime juice. Simmer 10 min. Spread beans on warmed tortillas and top with tofu mixture. Garnish with avocado, cilantro, and tomatoes.
