Tonight I made Fettuccine Alfreda from the Vegan With a Vengeance Cookbook.


It tasted delicious. I did have to make some changes to the recepie though. The sauce would not blend with only 1/2 cup of water per the recepie. I added a cup of unsweetened almond milk to correct this and it was a good choice. Due to this I also had to add some cornstarch. Next time I cook this I am just going to add a lot more pine nuts and almond milk as the liquid.

DSCI1953Fettuccine Alfreda

1/2 1b fettuccine

2 tsp olive oil

hing to taste

1/2 cup water or vegetable broth

1/2 cup toasted pine nuts

2 tsp soy sauce or Braggs Liquid Aminos

2 tsp chile powder

1 cup nutritional yeast

1/2 tsp salt

Black pepper to taste

Prepare pasta according to package directions.

Dry roast pine nuts and transfer to blender. Add rest of ingredients and blend till smooth with a nice semi thick consistency. The original recipe doesn’t recommend heating the sauce up but I did. (This recipe was slightly altered to make it sattvic.)
