The Honeymoon is over. :(

A lot has happened since my last blog post. My husband and I got married at the Radha Krishna Temple in Spanish Fork Utah on the 5th of June and honeymooned for a week in Las Vegas. On our honeymoon I picked up a sale copy of Veganomicon and tonight I am making the smokey grilled tempeh to go with our Indian style mashed potatoes. (Basically mashed potatoes with peas, jalapenos, and tumeric). Vegas is not a mecca for vegetarian foods. If I was a strict vegan I would have starved to death. When in Vegas though I must recommend The Rainforest Cafe at the MGM Grand. The food was amazing and the atmosphere is so cool. It looks like a rainforest inside and there are animals all over the place that move every ten minutes or so. I had some amazing nachos (I just asked for no meat on them) and my husband had a really tasty veggie burger. 

Before the wedding I didn’t cook very much, but I did make some great glazed oatmeal cookies

I also made some tasty pita sandwiches- lettuce from the garden, cheese, salad dressing, tomatoes, avocados, and cucumber.

At the hotel (The Luxor) we ended up eating Greek food at the buffet for most of our stay, but there were some really amazing gourmet desserts too.

The Luxor had fancy mini desserts. 🙂

I made a new friend in Vegas.

And last nights dinner. Savory Vegetable Cassarole. I made some changes to the recipe. First I dont cook with or drink wine so I substituted veggie broth and I omitted the onions and  subbed them out with a 1/2 tsp of hing. I also doubled the cheese and layered it in (half of it). 15 minutes before it was done cooking I removed the foil and covered it with the tomatos and the rest of the cheese. Yum! The veggies were a little undercooked, next time I will cook it for five more minutes.

Tempeh- the recipe says marinate 10 minutes. I say an hour for extra yumminess.

I highly recommend making this dish. It was so good! And easy to make. 🙂 And before I end this post. Its time for gratuitous kitty photos!!!!
